If you deploy a bundle in /Devices/Workstations and you need to exclude some folder inside Workstations, you can't.

The unique solution is to create a dynamic group, select Workstation folder to get all devices of the environment and exclude the devices which contains certain names...

In relationship or in requirements should be good to be an option that says,

Add requirement > Exclude ZENworks Folder (Or prevent deploy) > Folder selection.

• Better stiil, Have a section in a Bundle or Policy -> Settings -> Exclusion
  
  Under this you can put ZENworks Folder, Workstation Groups (Static or Dynamic) or Device to be excluded for deployment.
